Sunday

Last night we slept on the pull-out bed from the couch.
My back hurts now.
We like to have sleepovers in the living room.
They're not worth it. 
The bed is shot and the springs of the mattress poke into your body all night.
This morning Josh went to work for a few hours and I cleaned the house.
It needed to be cleaned so bad.
It's amazing the messes the four of us make 
--yes, I am including the dog and cat...they make the most messes; dragging clothes,toys and shoes all over--
Every Sunday I feel a little guilty for not going to church.
I haven't been since before we were married.
It's hard though because it's out only morning to sleep in a little.
Forgive me, Father.
I put a roast in the crock pot when I woke up.
Then I set the table.

P.S.
I made a roast last Sunday too.
Husby loved it so much that he requested it again!

After I cleaned the house I took a long shower.
I have a bad habit of showering until the hot water runs out...
which is about 35 minutes.
Oops.

Finally after all that boring stuff I made strawberry-banana crepes!
My favorite!
I hate crepes.
Just not when I make them, I don't know why that is.


Want to make some?
Here's how I make mine:

Crepe:
1 cup all-purpose flour
1/4 cup confectioners' sugar
2 eggs
1 cup milk
3 tablespoons butter, melted
1 teaspoon vanilla extract
1/4 teaspoon salt

Mix 'em all together.
Take a small frying pan and get it all heated up.
---I use low/medium heat so they don't overcook---
spoon 2 tablespoons of dough into the frying pan and swirl it around so it covers the whole bottom.


The batter makes about 20 crepes.

Cream Cheese Filling:
1 (8 ounce) package cream cheese, softened
1 1/4 cups sifted confectioners' sugar
1 tablespoon lemon juice (optional)
1 teaspoon lemon zest (optional)
1/2 teaspoon vanilla extract
1 cup heavy cream, whipped (I make it from scratch- directions below)
4 cups sliced strawberries

Mix everything together.
It should be thick and creamy.



Spoon filling onto crepe and top with berries (and/or bananas!)
Fold sides over.
and 
Viola!

Whipped Cream:
2 cups heavy cream
1/2 cup sugar
1/2 tsp vanilla

Beat about 5 mins until thick.

I guess I'm done for today.
Josh's family is stopping over for a few minutes to see the dog...
then eating all that good food I just showed you.
Bed by 9.
